Examines Cuba's response to the food crisis created by the collapse of the Soviet Bloc in 1989 which threw Cuba's whole economic system into crisis. Without fertilizer and pesticides, fuel and machinery, or fuel and transport Cubans turned to organic methods, Oxen, and Urban gardens. As a result Cuba created one of the world’s largest programs in sustainable agriculture and by 1999 Cuba's agricultural production had reached historic levels.
